Most coffee is months old before you open it. We roast one farm’s harvest every Monday and ship within hours — so your bag lands 3–5 days off roast, exactly when black cherry, cacao and citrus are loudest in the cup.
Why Monday matters
Coffee is produce. After roasting, aromatics peak between day 3 and day 14 — then oxygen quietly flattens everything that made the farmer’s work worth tasting. Most of the coffee sold in Europe spends months in that decline before it’s even opened.
So we run the whole company around one constraint: we only roast what’s already ordered. Every Monday at 6 a.m. the drum spins, every bag is sealed and labeled by noon, and the courier collects at four. You’re not buying stock. You’re claiming a slot in next Monday’s batch.

Decaffeinated gently with sugarcane ethyl acetate, so the fig and dark chocolate survive intact. A 10 p.m. cup with zero consequences.
The ritual
Before the inbox, before the school run, before anyone needs anything from you — there’s the kettle ticking, the smell of fresh grounds blooming, and a quiet window that’s entirely yours. That’s the half-light. It deserves better than stale coffee.
18 g, medium-fine. Fresh-roasted beans still fizz with CO₂ — you’ll smell cherry before water ever touches them.
Watch the bed swell and crackle. That bubbling is freshness you can see — five-month-old coffee just lies there.
Total brew: 3 minutes. The first sip is bright cherry; as the cup cools, cacao and orange zest take over.
Sourcing, in the open
No brokers, no mystery blends. We buy whole lots directly from three family farms we visit every harvest, and we publish what we pay — this season, an average of 2.4× the commodity C-price, agreed before picking starts, not after.
Because we only roast what’s ordered, farms know their volumes a season ahead. That’s what lets Elena plant slower-ripening caturra at 1,910 meters — the parcel that becomes First Light.
